This Samian olive oil cake is a traditional vegan pie, made without animal products, often baked during periods of fasting or just for a wholesome sweet treat. Mix the orange juice with the baking soda – it will fizz.
In a large bowl, whisk together the olive oil, sugar, cinnamon, clove, and orange zest.
Add the fizzing juice, then gradually mix in the flour until you get a thick, pourable batter.
Optionally fold in the walnuts.
Pour into a greased or parchment-lined baking dish, and sprinkle with sesame seeds if desired.
Bake at 180°C (350°F) for 35–40 minutes, until golden and a knife comes out clean.
